What the bird flu means for you.

This past week I was at the APPPA Conference in Dallas — a 3-day conference where I had the pleasure to collaborate with many other pastured-poultry farmers, which will drastically help improve our pasture-raised poultry management.

Ok, before you say ā€œboring!ā€ — we had LOTS of fun social activities. Especially with Aaron, our poultry manager, whom I took out of his cage for once and brought him with me, or should I say, "brought him out to pasture," haha. Our favorite was the rooster crow competition. You can watch Aaron’s crow here if you want a laugh.

Lol, but I digress.

A topic that somehow EVERYONE had on their minds and wouldn’t shut up about at the conference was Avian Influenza, which most of you have likely heard about in the news recently as:

BIRD FLU.

There’s been some speculation that this bird flu is just a deliberate hoax created to cause food shortages — but from my perspective, I’ll assure you that yes, it is REAL (and that’s coming from someone who’s DIRECTLY impacted).

A few of the pastured-poultry producers (which I have spoken with) at the conference had experienced an outbreak from this flu on their very own farm at one point. A nice reminder for me to be grateful and thank God for his protection over our farm, and not take anything for granted.

Most farms, though, being affected by this bird flu are the large, factory commercial operations. And you might actually be indifferent to it, including us even; especially considering that those ā€˜big’ commercial farms use conventional practices (resulting in ā€œnocturnalā€ hens living in dark cages living off of pure GMOs) — which for Wanda Farms, are BIG NO NO

But… These big farms being impacted may actually SIGNIFICANTLY impact your day-to-day life as well (You’ll find out why later in this blog).

At the same time, it is honestly very sad that in many of these large operations, hundreds of thousands to even MILLIONS of birds can just get wiped out in the snap of fingers. But this is nothing new. 

This 'AI' bird flu has been around in the poultry industry since 2016. Only In 2022, however, has it started to have such a prominent effect on the industry. ANY farms with flocks that show ANY signs of this flu must report it to USDA vet officials IMMEDIATELY — and not to mention, quarantine their farms with no birds for 150 days before bringing new flocks back to the farm (It is even recommended to cull all living birds right away to prevent the spread further).

So, what is Wanda Farms’ plan to be prepared?

We plan to continue on as normal… Because we ALREADY take all the necessary precautions (being Divinely protected helps too, ig)

I consider the precautions we take somewhat 'common sense' (but common sense ain't that common, huh?).

For example, If we visit another poultry farm, or our chicken processing facility, we will wash our boots, and even our clothes if necessary. 

For our farm, it’s unrealistic to lock down our birds inside their houses with NO access to pasture just to ā€œprevent the risk of infectionā€. If anything, the only reason they get sick would be because we locked them inside (poor birds). And by locking our birds inside they would NOT be "pasture-raised," and we are NOT going to change our egg operation from pasture-raised to 'cage-free.'

And by the way, some brands that advertise as pasture-raised —- I’m not going to call anyone out but, probably *cough cough* your go-to grocery store eggs — are doing EXACTLY this (caging their hens), and STILL sell their eggs as pasture-raised?!

Isn't that misleading?

Anyways. Some folks might say Wanda Farms is in a high-risk situation as a regenerative pasture-raised farm; reason being that wild birds could potentially come in contact with our chickens. And I don’t disagree. 

I’m actually trying to fight my insurance company right now to insure ALL of our farm’s poultry. I guess they're also scared of the recent outbreaks and don’t want to take on that liability (FARMING is very high-risk. Anyone in this business who wants to succeed likely has to be driven by something outside of themselves).

Now, to continue about how this impacts YOUR day-to-day life.

The simple answer: Economics 101. Allow me to demonstrate.

Chickens die from flu = no chickens… And with no chickens, who's gonna lay all these eggs?

There's only so much pasture-raised eggs that can supply everyone’s desire to eat in a healthy way. This will, obviously, result in everyone fighting (gruesomely too, haha) to get their hands on those eggs before anyone else does — because the supply is so low.

And what happens when SUPPLY is low? DEMAND increases. Which means that the prices go UP. But I bet you already knew that, haha; and that you'll thus have to pay MORE for the SAME dozen eggs.

We are currently getting incredible pressure from existing wholesale accounts for more eggs — our wholesale prices and retail prices are less than the commodity priced caged white eggs on the open market. 

We recognize this demand and need for eggs, and are doing what we can to expand. It might take some time, though, as does anything worthwhile. I’m going to sign papers on a 80k loan to purchase upgraded layer poultry equipment, which will increase our flock capacity by another 60%.

As you can see, yes, I’m quite invested in this. 

We will be doing some pricing adjustments on our eggs in the next week or 2 (as of writing this blog), and might need to implement a maximum purchase quantity if things get real crazy.

I do expect this 'situation' to continue for most of 2025 as it’s going to take time for the big flocks to recover from these blows. Now that farming has changed from small family farms to industrial, mega farms it ONLY takes a few to get hit for the ENTIRE food supply to feel the blow. 

All this said, I think it shows us again how our food system may be in a bubble that can *POP* at any moment — and reconfirms our commitment to transform agricultural food production from a commodity to a service that nourishes our local community with not only sustainable food, but food of superior quality.

Our prayers go out for all the farms taking these losses — and we pray for this to evoke a big positive change to our food system.

"Air-chilled" chicken: another marketing gimmick?

Air-Chilled vs. Water-Chilled: The Truth About Chicken Processing, PAA, and What Really Matters As consumers become more educated about food quality, one topic has begun circulating online in the health space: air-chilled chicken. New marketing language like ā€œair-chilledā€ is showing up on grocery store packaging everywhere. While the intention behind asking these questions is often good, the conversation has become oversimplified from our point of view.  At Wanda Farms, we believe transparency matters more than trends. Our chicken is water-chilled using a USDA-inspected cold water system with a peracetic acid (PAA) antimicrobial rinse. (We aren’t trying to hide anything.) However, when you keep reading, you'll learn why the air-chilled label has taken off, what actually impacts food safety and quality, and how we’re thinking about processing decisions with research instead of just chasing the latest marketing claim. Why Air-Chilled Debate Exploded The last several years, there’s been a growing push toward ā€œair-chilledā€ poultry showing up at higher-end grocery stores and specialty butchers. Shoppers see the word on a package next to a premium price tag, and it’s easy to assume it means cleaner, safer, or healthier chicken.  Consumers, as they should be, are mainly concerned about how their food is processed. ā€œAir-chilledā€ feels like a shortcut to less-processed, more natural chicken, especially compared to a method that involves a ā€œchemical rinse.ā€  But removing water immersion from the process does not automatically create a safer or healthier bird. PAA: The First Line in Food Safety One of the most common concerns surrounding water-chilled chicken is the antimicrobial rinse itself. That concern is understandable. Nobody wants to feel like their food was doused in chemicals.  That said, here’s what’s actually true: PAA (peracetic acid) is effectively a combination of vinegar and peroxide, breaking down into acetic acid, oxygen, and water residue. It’s USDA-approved and used at tightly controlled, low concentrations. It’s USDA Certified Organic-compliant, which is why it can be used at our Certified Organic processing facility.  It’s one of the most common tools in U.S. poultry processing for reducing Salmonella and Campylobacter loads. This distinction matters far more than simply choosing air over water. Understanding what PAA actually is, and why it’s there, eliminates a lot of the chemical and environmental concern consumers associate with the word ā€œrinse,ā€ while still allowing our processor to meet strict food safety standards. (FYI: we only use USDA-inspected processors, always.) The Real Issue: Air-Chilled ≠ Automatically Safer Much of the air-chilled preference stems from a legitimate texture and quality discussion, not necessarily a food safety one. What Air Chilling Actually Changes Air-chilled birds are cooled with circulating cold air instead of being submerged in a communal chill tank. This typically means:  Less retained water, so less purge in the packageBetter browning and skin crisping when cookedLess cross-bird contact during chilling All legitimate, real differences. Air-Chilled Is Not the Enemy: The Framing Is. There’s a growing misconception online that air-chilled is inherently ā€œcleanerā€ or ā€œsafer,ā€ and that water-chilled means ā€œcontaminated.ā€ That’s not supported by the facts. Air-chilled birds still receive an antimicrobial intervention, typically a cold mist spray that includes an antimicrobial, and many air-chill plants also use PAA earlier in the process, before the chill step.  Federal regulation doesn’t explicitly require an antimicrobial rinse, but it does require Salmonella testing, and to our processor’s knowledge, an antimicrobial step is effectively the only way to reliably pass that testing.  In a report on poultry processing*, Encyclopedia Britannica also notes an important nuance about water immersion chilling: while it can create cross-contact opportunities between birds, the combination of the wash effect plus the antimicrobial treatment can actually reduce total bacterial load across the batch.  The real question isn’t ā€œair vs. water.ā€ It’s whether the processor’s food safety program is doing its job. And both methods, done correctly, can be effective. *Link to report by Encyclopedia Britannica Why We Haven’t Switched to Air-Chilled We understand why customers are asking these deeper questions. We’ve been asking them too. Here’s where we’ve landed, and why: We aren’t the processor. Wanda Farms doesn’t control chilling method—our USDA-inspected processing partner does. To this day, I don’t know of any poultry processors in the Midwest that offer air chilling. If one did, we’d absolutely consider switching, but it’s not currently on the table.Water alone, without an antimicrobial, would concern me more. Chilling in plain water without PAA would hold bacteria rather than reduce it. The antimicrobial rinse is required by our USDA facility specifically to reduce the Salmonella load present on the bird.Air-chilled isn’t automatically ā€œchemical-freeā€ either. As noted above, most air-chill operations still apply an antimicrobial at some point in the process. It’s just applied differently.Sourcing and scale. Air-chilling requires more space, more energy, and reduces processor yield due to moisture loss, which is part of why it’s harder to find at the scale a small Midwest farm like ours needs. Where We Focus Instead Rather than chasing a chilling-method label, we put our energy into the things we believe actually move the needle on quality and integrity: Raising chickens on pastureRotational grazing practicesNon-GMO feedNo antibiotics or added hormonesHumane, low-stress handlingNutrient-dense food raised with integrity Our processor uses the PAA water-chill method because, alongside meeting food safety standards, they’ve found it helps maintain the flavor, juiciness, and texture our customers consistently tell us they love. Your Farmer’s Final Thoughts I think this air-chilled vs. water-chilled conversation is a lot like the no-corn, no-soy conversation we wrote about. A real concern, with some real substance to it, that’s gotten oversimplified into a single word on a package standing in for ā€œbetter.ā€ Salmonella occurs naturally in chickens and doesn’t affect them the way it affects us. It’s a human food-safety concern, not an animal-welfare one, and it’s why processors, air-chilled or water-chilled, treat for it. Properly cooked, handled without cross-contamination in your kitchen, it’s a non-issue either way.  I don’t want to chase a marketing label just to capture market share. I’d rather be straight with you about how our chicken is actually processed, why, and keep our focus on the parts of the process we do control: how the birds are raised. Pasture access, rotational grazing, non-GMO feed, humane handling, and nutrient-dense food raised with integrity. That’s the standard we hold ourselves to at Wanda Farms.
