The thinness of the steak allows it to absorb marinades deeply, enhancing its flavor significantly. For best results, cook it quickly over high heat, either by pan-frying or broiling, just a couple of minutes per side to prevent it from drying out. Please follow a recipe, which may be ours (click here), as this steak is not meant to just be thrown on the pan or grill, but requires some work to pre-tenderize. To serve, cut into thin slices to maintain tenderness. Excellent in stews, sandwiches, or even as the main protein in a hearty dinner plate with mashed potatoes and steamed vegetables.
