A hidden gem or, better said, the Rolls-Royce of pork, which comes from the jowl (or lower cheek) of our Berkshire hogs, which wouldn't be so far fetched to call a hedonistic indulgence—due to its irresistibly exceptional fatty marbling (cured and smoked over hardwood) which simply just melts like butter atop the roof of your tongue, as you're put into a fantasy world forgetting you had something to do after breakfast. 

Serving tips

Pan-fry it, cube it into greens or beans for that signature Southern soul-food, or crisp and crumble over casserole, mac and cheese, grits, or your favorite salad. “Once you go jowl, at regular bacon you will scowl.”

How We Use It

Jowl bacon can be swapped in for regular bacon, just remember it’s richer, fattier, and a little chewier.
