The tenderloin, lean and tender while being quite hydrating, is a cut worth knowing. Taken from the underside of the breast, it’s naturally mild though yields a delicate texture that stays juicy when cooked appropriately.
How to prepare:
Roast whole, slice into medallions for pan-searing, or marinate in raw milk before throwing on the grill. Season with herbs, garlic, and olive oil before roasting at 375°F until golden and just cooked through—roughly 30 to 40 minutes depending on size.
Serving tips:
Slice and serve with roasted vegetables, wild rice, or a fruit-y seasonal salad.
