First—trim away connective tissue, slice thinly or cube into “fun-sized” portions, and marinate in milk. After 12-24 hours, pan-sear in generous amounts of butter or tallow—and not without your “go-to” seasonings, onions, garlic, fragrant herbs and, perhaps, a dash of olive oil—over medium-high heat until gently caramelized on the outside, yet rosy within.
