Though the New York Strip (also called a strip-loin) is quite lean, it includes a dense strip of fat on its side, which, as a result, offers the perfect blend of a firm, bold texture and fat that melts upon the touch of your mouth.
Like for many lean cuts, pan-sear both sides for 3-4 minutes on high heat, but only after searing the strip of fat for 30 seconds—to carmelize it.
Rest for 5-10 minutes before serving with your favorite side dishes—like roasted potatoes and asparagus, or even sweet potato fries.
