Made almost entirely of muscle—though not without love too, of course—it is firm in texture, being quite lean, though surprisingly mild, and has a slightly beefy flavor that ably compliments stir-fries, tacos, or stews, and even serves great skewered and grilled over open flame. Marinate in milk, slice thin and sear—or braise it low and slow for something deeper and richer. “Heart” isn’t just a metaphor—it’s on our plate too.
