Rub generously, and gently, with fresh herbs, garlic, salt, and pepper—or any other of your family-favorite additions. Then braise or roast until beautifully browned and crispy on the outside, yet soft like a lightly roasted marshmallow on the inside.
Rest and then carve into thick slices, serving alongside crispy potatoes, roasted vegetables, or a velvety au jus.
