How to prepare

Rub generously with salt, pepper, garlic, fresh herbs, and a dash of olive oil. Then roast gently—low and slow—in the oven, allowing the savory juices to baste and caramelize into a crisp, golden crust. 

Serving tips

After resting, carve into succulent slices and pair with roasted root vegetables, creamy buttered mashed potatoes, and not without a hearty drizzle of velvety pan gravy. Or alternatively—our favorite—add to your italian beef sandwiches.
