Description

Bacon’s bolder and meatier cousin, cut from the shoulder roast of our Berkshire hogs—which, after being slowly cured, is smoked over natural hardwood for hours—is just as succulent, smoky, and salty, as our traditional bacon, but more defined, akin to that of a finely aged bordeaux. It's naturally richer and heartier than belly bacon (because it comes from the shoulder) and includes beautiful marbling not found in any other cut of pork. Sear a few slices on a pan doused in lard, allowing the outside to be crispy, though the middle to be juicy and soft like a marshmallow. Then layer onto breakfast sandwiches, crumble into omelets, or serve it straight with eggs and hot coffee… and “just one more slice” will turn into “where did it all go?”
