The loving and hardworking mother hens of our farm, who’ve spent their lives on pasture, pecking, scratching, and laying eggs. Stew hens are not ideal for meat-based meals, unlike our chicken, but will, in fact, produce a golden, nutritious broth unlike one you have ever tasted; as these matured hens have spent their long athletic lives building up nutrient-density and, although they are quite lean, a richer fat profile. Their rich, developed flavor and firm texture is best utilized when simmered low and gentle, yielding deep, golden broth and meat perfect for soups, stews, curries, or chicken salad. Drop one into a stockpot with your favorite herbs and veggies, let time do the work, and watch your kitchen fill with that old-fashioned, Sunday-at-grandma’s aroma.
