Description

Hearty and wholesome wings that, being much bigger compared to chicken wings, also represent the ultimate Duality when cooked with care—delicately tender meat (melts off the bone) as soft as a ripe peach protected by a crunchy, golden skin, akin to that of a tallow fried potato chip. Truly the best of both worlds. 

How to prepare:

Braise, roast in the oven, or smoke lowly and slowly until the meat starts to fall off the bone. Roast at 375°F for 1.5 to 2 hours, seasoned simply with salt, pepper, and herbs. Then slather with your “go-to” sauce and finish under the broiler for a crispy, caramelized finish. 

Serving tips:

Serve as they are, or with mashed potatoes or greens.
