Ancestral Ground Beef Mediterranean Stir Fry

Ingredients
- (1 lb.) Ancestral Ground Beef
- (1 Tbsp.) Olive Oil
- (1) Red Bell Pepper, deseeded & sliced
- (1 pint) Cherry Tomatoes, sliced in half
- (8 oz..) Baby Spinach (small tub)
- (4 Cloves) Garlic, minced
- (2) Green Onions, chopped (white & green separated)
- (1/2 tsp.) Dried Oregano
- (3-4 Tbsps.) Crumbled Feta
- Salt & Pepper, to taste
Directions
Stir-fry recipes come together quickly, with most of the effort spent prepping the vegetables. For best results, use a well-seasoned wok, which allows for even heat distribution and easy food movement. If you don’t have a wok, a large heavy-bottomed frying pan or cast iron skillet will work just as well.
Step 1: Prep the vegetables—cut the cherry tomatoes in half, deseed and slice the red bell pepper, finely chop the green onions, and separate the white and green parts.
Step 2: Heat the olive oil in a large pan over medium-high heat. Add the bell pepper and cherry tomatoes, sautéing for 4-5 minutes until the tomatoes are blistered and saucy. Stir in the garlic and cook for another minute.

Step 3: Add the spinach and the white parts of the green onion. The spinach will initially take up most of the pan but will quickly wilt down. Stir for 2-3 minutes until fully wilted, then transfer the vegetables to a plate.
Step 4: In the same pan, add the ancestral ground beef, oregano, salt, and pepper. Use a spatula to break up the meat and cook until browned. Drain any grease.

Step 5: Return the sautéed vegetables to the pan, add the green parts of the green onion, and stir until warmed through.
Step 6: Serve over a bed of rice for a heartier meal, garnish with crumbled feta, and serve. Enjoy!
