Ingredients
- (1 lb.) Ground Beef
- (2 ct.) Garlic Cloves (Minced)
- (2 tsp.) Ground Cumin
- (1 tsp.) Paprika
- (1/4 tsp.) Ground Coriander (Optional)
- (n/a) Salt
- (n/a) Pepper
- (1 cup) Brown Rice (Alternatives: Couscous or Quinoa)
- (1 cup) Plain/Greek Yogurt
- (1/4 of Whole Onion) Red Onion (Small, Thinly Sliced)
- (1/2 of Whole Cucumber) Cucumber (Diced or Cut Into Small Pieces)
- (n/a) Dill
- (1/2 cup) Cherry Tomatoes (Halved)
- (1/4 cup) Feta Cheese (Crumbled)
- (n/a) Mint (Optional)
- (n/a) Pine Nuts (Optional)
- (n/a) Lemon and Olive Oil, Drizzled (Optional)
- (n/a) Hummus
Directions
Intructions:
STEP ONE: PREPARE GRAINS
-Cook 1/2 cup dry rice, couscous, or quinoa according to package directions (yields about 1 cup cooked).
-Set aside.
STEP TWO: SAUTÉ BEEF
-Season the beef with minced garlic and spices.
-Mix until incorporated.
-Heat 1 tsp olive oil in a skillet over medium heat.
-Add ground beef, breaking it up with a spoon.
-Cook for 6–8 minutes, until beef is browned and cooked through.
-Drain excess fat if needed.
STEP THREE: PREPARE YOGURT SAUCE
-Set yogurt aside in a bowl.
-Dice cucumber and red onion and mix into yogurt.
-Add dill for taste.
STEP FOUR: ASSEMBLE BOWL
-Place rice or grain of choice in a bowl.
-Top with cooked beef, yogurt sauce, halved cherry tomatoes, and crumbled feta.
-Add any optional toppings if desired.
