Baked Eggs w/ Bacon & Veggies

Ingredients
- (8-12 ct.) Pasture Raised Eggs
- (4-6 ct.) Sliced Bacon (cooked, chopped)
- (1 cup) Mushrooms
- (1 cup) Tomatoes
- (1 cup) Bell Peppers
- (1 cup) Spinach
- (1/2 ct.) Onion (diced)
- (n/a) Basil
- (n/a) Thyme
- (n/a) Cream (or Milk)
Directions
STEP ONE: PREHEAT OVEN
-Preheat oven to 350°F.
-Lightly grease a baking dish.
STEP TWO: SEAR BACON
-Cook bacon in a skillet until crisp.
-Set bacon aside.
-Sear the roast on all sides until browned, then remove and set roast aside.
STEP THREE: SAUTÉ VEGGIES
-In the same pan, sauté veggies until soft, tender.
STEP FOUR: WHISK EGGS
-In a bowl, whisk the eggs.
-Optionally, add a splash of milk or cream for extra richness.
STEP FIVE: STIR TOGETHER
-Add bacon and veggies to mixture and stir.
-Pour mixture into greased baking dish.
STEP SIX: BAKE
-Bake uncovered for 25-35 minutes, until the center is just set.
STEP SEVEN: FINISH
-Allow to cool, slightly.
-Top with herbs and grated cheese. (Like parmesan or grass-fed cheddar.)
-Optionally, sprinkle with salt and/or pepper.
STEP EIGHT: SERVE
-Slice, and serve.
