Ham & Potato Soup
Made in one pot with ingredients you likely already have on hand, this soup makes for a quick weeknight dinner. It is also a great way to utilize any leftover ham. Serve with a nice salad and crusty bread.

Ingredients

  • (4) Red Potatoes, peeled & cubed
  • (1) Medium Onion, chopped
  • For the Soup
  • (4 Tbsp.) Butter, melted
  • (4 Tbsp.) Flour
  • (2 1/4 C) Milk
  • (2 tsp.) Better than Bouillon Chicken
  • (1 Tbsp.) Dried Parsley
  • (1/2 tsp.) Ground Thyme
  • (1 1/2 - 2 Cups) Ham, cooked & diced

Directions

Step 1: Peel and dice the potatoes and chopped the onion.

Step 2: Place the diced potatoes and chopped onion in a large pot and cover them with water. Place on the stove over medium-high heat and cook until the potatoes are just tender about 15 minutes.

Step 3: When the potatoes are tender, drain and set aside.

Step 4: In the same pot, melt the butter over medium heat. Once melted, add the flour and mix it together. Then add the milk and Better than Bouillon and whisk until well combined and begins to slightly thicken. 

NOTE: If you prefer using chicken bouillon cubes, dissolve two cubes in 3/4 cup of hot water and add that to the mixture instead.

Step 5: Stir in the potatoes, onions, and herbs. The potatoes will help to thicken the soup once added. If the soup gets too thick, add an additional 1/4 cup of water. Simmer for 25 minutes, stirring often.
