Beef Tallow
Suet is fat from around the kidneys of animals - - usually cows or mutton (mature adult sheep). Suet, like avocado oil and coconut oil, contains natural and healthy unrefined saturated fats. It can be used for cooking but is not shelf stable and requires refrigeration. Once the beef suet is rendered (cooked down) and clarified (impurities removed) it is called tallow. My research found that only tallows from hormone-free grass-fed animals are recommended for use in cooking for humans. Thankfully, that's exactly what we have from Wanda Farm!

Instant Pot Beef Bourguignon
Boeuf Beef Bourguignon, originally created by Julia Child, shows a total cook time of 6 hours. I have previously made it in the crock pot a couple of times to make it a little easier, but my version of her recipe in the electric pressure cooker cuts the cooking time by 4 1/2 hours. This probably isn't a recipe you'll make midweek when time is of the essence, but this is a quicker version that is great for a Sunday dinner with the family, and a great use for a Beef Arm Roast.

Ground Chicken Air-Fried Southwest Egg Rolls
These Southwest Egg Rolls with ground chicken make for an easy mid-week meal or can double as an appetizer if hosting a party. The vegetables can easily be chopped up ahead of time and the filling mixture is good in the refrigerator for 2 or 3 days. Roll and air-fry additional egg rolls as needed for your meal or leftovers. Because they are air-fried right before eating it doesn't feel like eating leftovers at all.
