Ingredients
- (1-2 lbs.) Flank Steak
- (4) Cloves Garlic, minced
- (1/2-3/4) Jalapeno, deseeded & diced
- (2) Limes, juiced
- (1/2 c) Orange Juice
- (3/4 c) Cilantro, chopped & divided
- (1/4 tsp.) Salt
- (1/4 tsp.) Pepper
- (1 tsp.) Fish Sauce
- (2 Tbsp.) Rice Vinegar
- (1/4 c) Vegetable Oil
- (1) Gallon Zip Bag
- Garnish
- (8) Tortillas
- (1) Lime, sliced into wedges
- (1) Red Onion, diced
- (1/4 c) Cilantro, chopped
- (1/2 c) Shredded Cheese
- Equipment
- Citrus Juicer
- Garlic Press
- Grill or Cast Iron Pan
Directions
Step 1: Dice and de-seed the jalapeno, chop the cilantro and mince the garlic. Set 1/4 cup of cilantro aside for garnish.
Step 2: Add all of the ingredients into the gallon bag and mush around to mix.
Step 3: Add flank steak to the bag and seal removing as much air as possible. Place in the refrigerator for 2 hours or as long as overnight. The marinade adds fresh citrus flavor and tenderizes the meat.
Step 4: When ready to cook, preheat the grill or a cast iron pan. Cook the flank steak for 5-7 minutes per side depending on the thickness of your steak. Use a meat thermometer to prevent overcooking. Beef is medium rare at 130-140°F, and medium at 140-150°F.
Step 5: Once cooked to desired doneness, allow the meat to rest before cutting it into thin slices against the grain.
Step 6: Serve in the warm tortillas of your choice. I prefer corn while my husband and son prefer flour. When I was young my Grandfather taught me to heat tortillas over the burner of our gas stove. Flour tortillas cook very quickly. Garnish the tacos with red onion, cilantro, cheese, a squeeze of lime, and your favorite chips and salsa. I made a fresh tomatillo salsa to go with our meal. Serve and enjoy!
