Veggie Egg Bake

Ingredients
- (1 lb.) Pork Breakfast Bulk (Sugar Free)
- (12) Fresh Pasture Raised Eggs (Large)
- (1 C) Greek Yogurt
- (4) Green Onions, chopped
- (1) Red Bell Pepper, diced
- (1) Green Pepper, diced
- (8 oz.) Sharp Cheddar Cheese, shredded
- Salt & Pepper, to taste
Directions
Step 1: Preheat the oven to 350°F.
Step 2: Cook the pork breakfast sausage in a skillet until fully browned, then drain any excess grease.
Step 3: Prepare the vegetables by dicing the red and green bell peppers and chopping the green onions. Shred the cheese and set everything aside.
Step 4: In a large mixing bowl, whisk the eggs until smooth.
Step 5: Add 1 cup of Greek yogurt to the eggs and whisk until fully combined.
Step 6: Stir in the green onions, diced peppers, salt, and pepper until evenly mixed.
Step 7: Spread the cooked sausage evenly in a greased 9x13-inch baking dish. Pour the egg mixture over the sausage, then sprinkle the shredded cheese on top.
Step 8: Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the center is set.
Step 9: Let cool slightly before serving. Enjoy!
